Whole Wheat Waffles with Fruit Ellis Vidler
Makes 8 single waffles
- 1/2 cup (1 stick) butter
- 1 cup whole wheat flour
- 1/2 cup unbleached white flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 eggs
- 1-1/4 cups buttermilk or sour milk (whole milk with juice of half a lemon)
Melt the butter and set aside. Beat the eggs until well mixed. Mix all the dry ingredients in a bowl. Whisk until well mixed. Add the flour mixture alternately with the milk to the eggs, mixing well after each addition. Stir in the melted butter.
Cook in a preheated waffle iron. Mine takes about 6 or 7 minutes.
Fruit
Serve with blueberries or sliced strawberries and a little syrup made from some of the fruit. The whole wheat and strawberry combination is especially good.
Sometimes I mix a little crushed fruit in the batter.
